Don Quixote Single Cask Blue Corn Bourbon is a smooth all natural whiskey with a rich caramel finish. This bourbon is handcrafted from organic NM blue corn using an all-natural process that begins by naturally malting our grain to convert the starch to sugar. This avoids the need for barely and reduces our carbon footprint. We barrel age our single cask at the top of the row of the barrel room to maximize temperature variation. Warm weather aging draws the bourbon deep into the oak while cold weather aging pushing the bourbon back out. This cycling effect enhances our single cask bourbon’s deep taste and aroma. Don Quixote Blue Corn Bourbon is a smooth all natural whiskey with no added coloring, flavors or chemicals. Our bourbon is handcrafted from organic NM blue corn using an all-natural process that begins by naturally malting our grain to convert the starch to sugar. This avoids the need for barely and reduces our carbon footprint. We are a high altitude distillery, which helps soften the whiskey in part because we separate the alcohol at a much lower temperature. We distill in a handcrafted whiskey Still designed to provide optimal character. We employ the use of a Thumper to further enhance our bourbon. Barrel aged a minimum of six years. If you are a connoisseur of high quality whiskey, you will enjoy the taste of our Blue Corn Bourbon.

Gin requires an exceptional recipe, attention to detail, and an artisan's flare for adventure. Our citrus gin is distilled in small batches and infused with New Mexico juniper, pinon, sage, chamisa and rose hips. This Bombay style gin is zested with lemons, limes and oranges and is perfect for a Martini or Gin and Tonic.

Don Quixote Rye Vodka is made from Rio Grande valley rye using an all-natural process that begins by naturally malting our grain to convert the starch to sugar. This avoids the need for barely and reduces our carbon footprint. Our handcrafted column reflux Still is specially designed for our dry high desert elevation to yield a soft slightly sweet spirit. This Polish style vodka retains a slight taste and aroma of the grain so can be enjoyed straight or in your favorite cocktail.

Johnny Appleseed could not have imagined that 100 years after he first planted apples along the Rio Grande, that Don Quixote distillery would harvest them for its apple brandy. Made from a generations old family recipe in a handcrafted copper pot Still specially designed for our high elevation. Barrel aged in French oak for seven years, this Calvados style brandy is smooth with an invitingly subtle apple taste. Enjoy straight or in your favorite cocktail. Calvados style means our apple brandy is made from 100% apple wine with no post distilling flavoring or aramatics added, and aged in French oak.

Don Quixote Muscat brandy is made from sweet Muscat grapes. The muscat grape was first brought to Northern New Mexico by Spanish missionaries in the 1500's. Distilled spirits were first made in America here in Northern New Mexico by the missionaries. Later, other countries such as Chili and Peru imported NM Muscat grapes and produced a distilled spirit they called Pisco. We use a copper Alembic Still specially crafted for our high elevation. Barrel aged in French oak for two years, which is the Chilean Pisco style, this young brandy is soft with slight edge. Use as a substitue in your next Pisco Sour.

Don Quixote Spirit of Santa Fe brandy is handcrafted from New Mexico fruit in small batches using a custom copper pot still special designed to capture the mystery and charm of the City Different. Our brandy begins its journey as premium wine fermented in the old world style and then slowly distilled at low temperatures to allow the sweet spirits to softly separate from the wine before being barrel aged in French oak for a minimum of eight years.

At Don Quixote, we distill in small batches using a copper Alembic Still. Located in the high mountains of Northern New Mexico, low boiling temperatures allow the grape pomace flavors to softly seep into our spirit creating a smooth aromatic grappa that is not as harsh and bitter as most.

Our Grappa is handcrafted in small batches from the pomace of white wine grapes using traditional Italian grappa making techniques. Lightly aged in French oak, our grappa is not as harsh and bitter as most.
